BLT Pasta Salad with Creamy Dressing

Ingredients:

  • 8 oz pasta shells or penne

  • 6 strips bacon, chopped

  • 3 cups romaine lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • ¼ cup mayonnaise

  • ¼ cup sour cream

  • 2 tbsp fresh lemon juice

  • 2 tbsp slice scallion, for garnish

  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to package directions—drain and cool.

  2. Cook bacon until crispy. Drain on paper towels. Tear into bite-sized pieces.

  3. Whisk together mayonnaise, sour cream, lemon juice, and dill.

  4. Toss cooled pasta with dressing, then fold in lettuce and tomatoes.

  5. Top with crispy bacon and serve immediately.
