Mediterranean Farro Salad with Roasted Vegetables
Prep Time: 15 minutes | Cook Time: 25 minutes | Serves: 2-4
Ingredients:
¾ cup farro
1 medium zucchini, diced
1 red bell pepper, diced
½ red onion, sliced
3 tbsp olive oil
2 tbsp lemon juice
¼ cup fresh herbs (parsley, mint)
Salt and pepper to taste
Instructions:
Preheat oven to 425°F. Cook farro according to package directions.
Toss vegetables with 2 tbsp olive oil, salt, and pepper. Roast 20 minutes.
Let farro and vegetables cool to room temperature.
Combine farro, roasted vegetables, remaining olive oil, and lemon juice.
Fold in fresh herbs and season to taste.
