Asian Soba Noodle Bowl with Charred Vegetables

Prep Time: 15 minutes | Cook Time: 10 minutes | Serves: 2-4

Ingredients:

  • 8 oz soba noodles

  • 1½ cups shelled edamame

  • 6 shiitake mushrooms, halved

  • 3 baby bok choy, halved lengthwise

  • 3/4 cup snap peas

  • 2 tbsp sesame oil

  • 3 tbsp soy sauce

  • 2 tsp sesame seeds

  • 3 radishes, thinly sliced

  • Fresh cilantro for garnish

Instructions:

  1. Cook soba noodles according to package directions. Drain and rinse with cold water.

  2. Heat a saute pan over high heat. Sauté bok choy and mushrooms until edges are browned, about 3-4 minutes per side. Add snap peas and continue to cook 3 additional minutes—season with salt and pepper to taste.

  3. Toss noodles with sesame oil and soy sauce.

  4. Arrange noodles in bowls with charred vegetables, edamame, and radish slices.

  5. Garnish with sesame seeds and cilantro.
