Fresh Quinoa Tabbouleh Salad
Prep Time: 20 minutes | Cook Time: 15 minutes | Serves: 2-4
Ingredients:
¾ cup quinoa
10-15 cherry tomatoes, halved
1 cucumber, sliced
½ red onion, finely diced
¾ cup fresh parsley, chopped
¼ cup fresh mint, chopped
¼ cup olive oil
3 tbsp lemon juice
Salt and pepper to taste
Instructions:
Cook quinoa according to package directions. Cool completely.
Combine diced tomatoes, cucumber, and red onion in a large bowl.
Add cooled quinoa, parsley, and mint.
Whisk olive oil and lemon juice together.
Pour dressing over salad, toss well, and season with salt and pepper.
