Fresh Quinoa Tabbouleh Salad

Prep Time: 20 minutes | Cook Time: 15 minutes | Serves: 2-4

Ingredients:

  • ¾ cup quinoa

  • 10-15 cherry tomatoes, halved

  • 1 cucumber, sliced

  • ½ red onion, finely diced

  • ¾ cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped

  • ¼ cup olive oil

  • 3 tbsp lemon juice

  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package directions. Cool completely.

  2. Combine diced tomatoes, cucumber, and red onion in a large bowl.

  3. Add cooled quinoa, parsley, and mint.

  4. Whisk olive oil and lemon juice together.

  5. Pour dressing over salad, toss well, and season with salt and pepper.
