Zesty Charred Tomato Salsa
Smoky, bright, and full of flavor
Makes about 2 cups

Ingredients

  • 4 vine-ripened tomatoes, halved

  • 1 jalapeño (or serrano for more heat)

  • 2 garlic cloves, unpeeled

  • ½ small red onion, peeled and quartered

  • Juice of 1 lime

  • ¼ cup fresh cilantro, chopped

  • ½ tsp salt (or to taste)

  • Optional: 1 tsp honey or agave

Instructions
1. Char the veggies
In a dry skillet or grill pan over medium-high heat, char the tomatoes (cut side down), jalapeño, garlic, and onion until blistered and soft, about 6–8 minutes. Turn occasionally.

2. Blend
Let cool slightly. Peel the garlic and remove the stem (and seeds, if desired) from the jalapeño. Add all ingredients to a blender or food processor with lime juice, cilantro, salt, and optional honey. Blend to your preferred texture.

3. Taste + adjust
Taste and adjust salt, lime juice, or spice level as needed. Let sit 10 minutes or chill before serving.

  • As a dipping sauce for roasted veggies
